Here's a delicious – and simple – way to create a special Christmas dinner for your weaning baby. This quick-to-make purée includes turkey (of course) and stacks of nutrient-rich vegetables, including sweet potato, spinach and parsnips.

You can blend it very smooth, if your baby's only just started solid foods, or leave it slightly chunkier, if your baby's a little older and is able to cope with chewing and swallowing small lumps

  • 2 tsp sunflower oil
  • 1 onion
    chopped
  • 75g parsnip
    peeled and diced
  • 150g sweet potato
    peeled and diced
  • 200g minced turkey thigh
  • 200 ml unsalted chicken stock
  • 30g fresh spinach
  • 1 tsp fresh thyme
    chopped
  • 20g Cheddar cheese
    grated

    Method

    • step 1

      Heat the oil in a saucepan. Add the onion and fry for 3 minutes. Add the parsnip, sweet potato and minced turkey. Brown over the heat for a further 3 minutes

    • step 2

      Add the stock, cover and simmer for 15 minutes

    • step 3

      Add the spinach and thyme. Stir until wilted. Blend to the desired consistency, and then stir in the grated cheese

    • step 4

      Blend to the desired consistency for your baby
