- 2 tsp sunflower oil
- 1 onionchopped
- 75g parsnippeeled and diced
- 150g sweet potatopeeled and diced
- 200g minced turkey thigh
- 200 ml unsalted chicken stock
- 30g fresh spinach
- 1 tsp fresh thymechopped
- 20g Cheddar cheesegrated
Method
step 1
Heat the oil in a saucepan. Add the onion and fry for 3 minutes. Add the parsnip, sweet potato and minced turkey. Brown over the heat for a further 3 minutes

Add the stock, cover and simmer for 15 minutes

Add the spinach and thyme. Stir until wilted. Blend to the desired consistency, and then stir in the grated cheese
