  • 3 Cooking apples
  • 6 Fresh apricots
    (or half a can)
  • 1tbsp Cinnamon
  • 3tbsp Ground almonds
  • 1tsp Brown sugar
  • 50g Butter
  • 150g Plain flour

    Method

    • step 1

      Chop cooking apples (1-3 depending on the size of your dish) into small chunks.

    • step 2

      Put apple chunks into a saucepan, cover with water and bring to the boil.

    • step 3

      Add cinnamon and reduce the heat to simmer.

    • step 4

      Stir for 5-7 minutes until apples soften.

    • step 5

      While your apples are softening, place butter and flour into a separate bowl and rub together with your hands until they become breadcrumb-like, then stir in the sugar.

      Chop (4-6) apricots into pieces, removing the stones if using fresh fruit.

    • step 7

      Take the apples off the heat and mix in the apricot pieces.

    • step 8

      Put the mixture into your baking dish.

    • step 9

      Spoon your crumb mix evenly onto the apples and apricots.

    • step 10

      Sprinkle ground almonds on the very top.

    • step 11

      Place in the oven for around 30 minutes or until the topping turns a golden brown.

    • step 12

      It’ll be piping hot so wait for it to cool down before serving!

    • step 13

      Make this extra crunchy by sprinkling flaked rather than ground almonds on the top.
