Beef and sweet potato

- 2tbsp Olive oil
- 1 Clove of garliccrushed
- 2tsp Paprika
- 1 Onionchopped
- 150g Beef steakcubed
- 1tbsp Plain flour
- 100g Mushroomssliced
- 275g Sweet potatochopped
- 300ml Very low salt chicken stock
- 10 Dried apricotschopped
- 2 Bay leaves
- 1 Orangejuiced
Method
step 1
Fry the onion and garlic in oil until soft.

Coat the beef chunks in flour, add to the pan and fry until browned.

Add the mushrooms and paprika, stirring until cooked through.

Add the sweet potato, stock, orange juice and chopped apricots.Bring to the boil, then transfer into a casserole dish and cook in the oven at 180C/350F/Gas mark 4 for one hour and 20 minutes.
