  • 2tbsp Olive oil
  • 1 Clove of garlic
    crushed
  • 2tsp Paprika
  • 1 Onion

  • 150g Beef steak
    cubed
  • 1tbsp Plain flour
  • 100g Mushrooms
    sliced
  • 275g Sweet potato
    chopped
  • 300ml Very low salt chicken stock
  • 10 Dried apricots
    chopped
  • 2 Bay leaves
  • 1 Orange
    juiced

    Method

    • step 1

      Fry the onion and garlic in oil until soft.

    • step 2

      Coat the beef chunks in flour, add to the pan and fry until browned.

    • step 3

      Add the mushrooms and paprika, stirring until cooked through.

    • step 4

      Add the sweet potato, stock, orange juice and chopped apricots.Bring to the boil, then transfer into a casserole dish and cook in the oven at 180C/350F/Gas mark 4 for one hour and 20 minutes.

      Mash or blend to the required consistency.
