  • 25g Leeks
    finely chopped
  • 100g Potato
    diced
  • 30g Cheddar cheese
    grated
  • 12g Unsalted butter

    Method

    • step 1

      Heat the butter in a pan and add the leek. Stir fry over a low heat for around 3 minutes.

    • step 2

      Add the potato, cover with boiling water, cover and simmer for around 6 minutes.

    • step 3

      Once cooked, drain, add the cheese and mash to the required consistency.
