Cheesy sweetcorn fritters

- 60g Self-raising flour
- 2tbsp Cheddar cheesegrated
- 340g Tinned sweetcornwell-drained
- 2 Eggs
- A glug of sunflower oil
Method
step 1
Mix the flour, grated cheese and sweetcorn in a large bowl.

Beat the eggs, then add to the sweetcorn mix and stir well.
step 3
Heat a glug of sunflower oil in a large frying pan. Carefully add spoonfuls of the sweetcorn mixture, patting them down into fritter shapes.

Fry on both sides until golden brown and the egg is cooked through.
