  • 300ml Very low salt vegetable stock
  • A Knob of unsalted butter
  • 100g Couscous
  • 1tbsp Olive oil
  • 100g Red pepper
    chopped
  • 100g Chickpeas
  • 50g Onion
    chopped

    Method

    • step 1

      Bring the stock to boil in a pan.

    • step 2

      Add the butter.

    • step 3

      Stir the couscous in with a fork and leave to one side for about 6 minutes.

    • step 4

      Place the chickpeas in a microwaveable bowl, cover with water and microwave for 2 minutes.

    • step 5

      In a frying pan, heat the oil and fry the onion until soft.

    • step 6

      Add the peppers and chick peas and cook for a further 4 minutes.

    • step 7

      Fluff up the couscous with a fork and stir in the veg.

    • Once you have separated your child’s portion, add a dash of lemon juice and some black pepper for a great accompaniment to roast chicken or lamb.
