Chickpea and red pepper couscous

- 300ml Very low salt vegetable stock
- A Knob of unsalted butter
- 100g Couscous
- 1tbsp Olive oil
- 100g Red pepperchopped
- 100g Chickpeas
- 50g Onionchopped
Method

Bring the stock to boil in a pan.

Add the butter.

Stir the couscous in with a fork and leave to one side for about 6 minutes.

Place the chickpeas in a microwaveable bowl, cover with water and microwave for 2 minutes.
step 5
In a frying pan, heat the oil and fry the onion until soft.
step 6
Add the peppers and chick peas and cook for a further 4 minutes.
step 7
Fluff up the couscous with a fork and stir in the veg.
