  • 150g Dried apricot
  • 150ml Apple juice
  • 1 Squeeze of lemon juice
  • ½tsp Cinnamon
  • 250ml Greek yoghurt

    Method

    • step 1

      Put the apricots into a heavy based, lidded saucepan along with the apple juice, cinnamon and lemon juice. Simmer on a low heat until the apricots are soft and plump.

    • step 2

      Pulse in a blender and then stir into the yoghurt.

    • step 3

      *Use any dried fruit you fancy for this recipe. Try mixing chopped figs or prunes with apricots for a different flavour.
