  • 1 Carrot
  • 1 Courgette
  • 1 Potato
  • 30g Butter
    or 4 tbsp olive oil

    Method

    • step 1

      Peel the carrot and potato. Grate the carrot, courgette and potato and mix well in a bowl.

      Place the grated mixture into a clean tea towel and squeeze out all the moisture. After you have squeezed out the moisture from the grated veg, put the tea towel aside for a couple of minutes, then go back to it and wring out the last few drops of water.

    • step 3

      Heat the butter or oil in a frying pan then add the mixed grated veg. You can make one single rosti or several - the mixture will hold together if shaped. Make sure that the mixture is flat and fry gently for 3-4 minutes on both sides or until the rosti’s are crispy and a light golden brown colour.

    • step 4

      Transfer to a plate and serve with salad. For babies - you can mash the rosti to the right texture for your baby.

    • Add some grated cheese to a cooked rosti whilst still warm to make a delicious all-round meal. Alternatively, the rosti can be a great side dish for an older toddler alongside some grilled chicken or fish.
