  • 1 Small salmon fillet
    checked for bones
  • 50g Baby pasta
  • ½ Small leek
    sliced and diced
  • 50g Broccoli
  • 3tbsp Parmesan
    grated
  • 4tbsp Crème fraiche
  • 5tbsp Milk
  • 1tbsp Olive oil

    Method

    • step 1

      Place the salmon in a microwaveable bowl with 2 tablespoons of milk and cook in the microwave for 2 minutes. Check the salmon for any bones and flake.

    • step 2

      Cook the baby pasta. If you have a steamer pan, steam the broccoli above the boiling pasta for 4-5 minutes. Alternatively, cook the broccoli in a pan of boiling water for 4 mins.

    • step 3

      Place the leek in a saucepan with a little olive oil and cook over the heat until soft. Add the rest of the milk, bring to the boil, then add the salmon and poach for 3-4 mins.

      Stir in the cheese until melted, then add the pasta.

    • step 5

      Stir in the crème fraiche and mash to the desired consistency.

    • If you don’t have parmesan to hand, any full flavoured cheese, such as Cheddar, can be used.
    • This makes a great lunch for mum too – add an extra touch of cheese and some black pepper – and don’t puree!
