Very berry rice pudding

- 50g Pudding rice
- 500ml Milk
- 1 Handful of raspberriesmashed or chopped
- 1 Handful of blackberriesmashed or chopped
- 1 handful of strawberriesmashed or chopped
Method

Use butter to grease a shallow, ovenproof dish.

Place rice and milk in the dish and stir. Cook at 160°C/325°F/Gas mark 3 in the centre of a preheated oven until rice is creamy and skin is golden (45 minutes to 1 hour, depending on your oven).

Once pudding has cooled, stir in chopped/mashed berries.

*You can also cook it in a saucepan - bring the rice, sugar, milk to the boil, cover and simmer for 30-40 minutes, stirring occasionally.
