Annabel Karmel's Favourite Sandwich Selection

- Serves 5 - 8
- 10 Slices of bread
- Butter
- Yeast extract
- 25g Gruyère cheese
- 50g Cooked chicken
- 1 Spring onionsliced
- 1tbsp Mayonnaise
- 1tsp Lemon juice
- 1tbsp Mild Cheddar cheesegrated
- 1tbsp Cream cheese
- 1tbsp Fruit chutney
- 6 Slices of cucumber
- 1tbsp Hummus
- ½ Carrotgrated
- 1tbsp Mature Cheddar cheesegrated
- 2 Slices of ham
Method
step 1
Lightly butter the slices of bread. Spread a little yeast extract over one slice. Add the gruyere on top of the yeast extract. Sandwich together and slice into six fingers.
step 2
Chop the chicken and mix with the mayonnaise, spring onion and lemon, then spread over one slice of bread. Sprinkle over the mild cheddar, sanwich and cut into triangles.
step 3
Spread the cream cheese over one slice of bread, and the chutney over another, then top with the cucumber. Sandwich and slice into triangles.
step 4
Spread the houmous over one slice of bread, top with the grated carrot and mature cheddar. Sandwich together and slice into six little fingers.
step 5
Top two slices of bread with the ham and the coleslaw, sandwich and slice into squares. Pack up a selection of these dinky sarnies to keep boredom at bay!
