  • 1tsp Butter
  • 600ml Double cream
  • 200g Cheese
    any type you like, grated
  • 1tsp Mustard powder
  • A pinch of salt and pepper
  • A pinch of paprika
    (optional)
  • 1 Large cauliflower
    eaves stripped and broken into pieces

    Method

    • step 1

      Cook the cauliflower by steaming or boiling in a pan of water until just cooked, then drain and set aside

    • step 2

      Preheat the oven to 200C

    • step 3

      Add the butter to a hot pan to melt

    • step 4

      Pour in the double cream and sprinkle in the grated cheese gradually (reserving some for sprinkling over the dish before baking), stirring continuously

    • step 5

      Add the mustard powder, salt, pepper and paprika if using

    • step 6

      Once the cheese has melted into the cream creating a cheese sauce, remove from the heat

    • step 7

      Place the cauliflower in a baking dish. Pour over the cheese sauce and top with more grated cheese

    • step 8

      Bake in the oven for 20 minutes or until the top is bubbling and golden
