Annabel Karmel's carrot and sweetcorn fritters

- Makes 8 fritters
- 50g self-raising flour
- 1 egg
- 1 tbsp milk
- 1 carrotgrated
- ½ red onionchopped
- 2 tbsp tinned sweetcorn
- 2 tbsp fresh basilchopped
- 1 tbsp sweet chilli sauce
- 50g Cheddar cheesegrated
- A little olive oil or sunflower oilfor frying
Method
step 1
Measure the flour, egg and milk into a bowl. Mix together, then add the remaining ingredients. Season.

Heat the oil in a frying pan. Fry spoonfuls of the mixture for 2 to 3 minutes on each side. Flatten slightly with a spatula as you cook them.

Serve with dipping sauce if desired.
