
Annabel Karmel's courgette ‘spaghetti’ with carrot, sunblush tomato and pesto

- 2 Courgettes
 - 1 Carrotpeeled
 - 2tbsp Olive oil
 - 1 Onionfinely chopped
 - 2 Garlic clovescrushed
 - 3tbsp Fresh pesto
 - 8 Sunblush tomatoessliced
 - 50g Parmesangrated
 
Method
step 1
Put the courgettes and carrot through a spiraliser to make long curls. Alternatively you could use a julienne cutter to make long, thin strands of courgette and carrot.
step 2
Heat the oil in a large frying pan. Add the onion and garlic and fry until soft.
step 3
Add the vegetables and quickly toss over a high heat for a few minutes until just wilted.
step 4
Drain away some liquid from the pan, then add the tomatoes, pesto and cheese.
step 5
Season and toss together. Serve at once.
