Annabel Karmel's Monster Muffins

For the muffins
- 225g plain flour
- 1tbsp baking powder
- 125g buttersoftened
- 125g caster sugar
- ¼tsp salt
- 1 egg
- 200ml milk
- 1tsp ground ginger
- 1tsp cinnamon
- 100g raisins
- 125g pumpkinpeeled and grated
For the decorations
- vanilla frosting
- green food colouring
- white fondant icing
- black fondant icing(or white fondant icing mixed with black food colouring)
Method
step 1
Preheat the oven to 180°C (160°C fan), 350°F or gas mark 4. Line a 12-hole muffin tin with muffin cases

Measure all of the ingredients into a free-standing electric mixer. Mix until blended
step 3
Spoon the mixture into the cases and bake for about 20 to 25 minutes, until well risen and lightly golden on top

Place the muffins on a wire rack to cool. While they're cooling, colour about half of the vanilla frosting green, using some of the food colouring. When the muffins are completely cool, swirl the green icing on top of the muffins, using a piping bag with a plain nozzle

Make small balls of white fondant icing and flatten them to make the whites of the eyes. Make smaller balls of black fondant icing and flatten them to make the pupils of the eyes. Add the eyes to the green frosting on top of the muffins, to make faces. Then roll out some black fondant icing, cut out some curly eyebrows and moustaches and add them to the faces to give them some proper monster personality
