Annabel Karmel's vegetarian noodles

- 120g Egg noodles
- 1 Onionsliced
- 1 Carrot
- 1 Small leek
- 20ml Sunflower oil
- 150g Mixed peppers
- 75g Baby courgettes
- 1 Clove of garliccrushed
- 50g Beansprouts
- 1tbsp Teriyaki sauce
Method
step 1
Cook the noodles according to the packet instructions and drain. Prepare all of the vegetables by cutting them into thin strips like ribbons.
step 2
Stir fry the onion, carrot and leek in the oil for 5 minutes. Then add the peppers, courgettes and garlic for 5 minutes.
step 3
Add the beansprouts and noodles. Pour over the teriyaki sauce. Season to taste and serve.
