  • 175g Plain flour
  • 75g Butter
  • 125g Mature cheddar cheese
    grated
  • ¼tsp Pepper
  • 1 Egg
  • Marmite™
    for spreading

    Method

    • step 1

      Preheat the oven to 190°C.

    • step 2

      Sift the flour into a mixing bowl.

    • step 3

      Cut the butter into pieces, add to the flour and rub in with your fingertips until the mixture has the consistency of fine breadcrumbs.

      Add the grated cheese and pepper.

    • step 5

      Beat the egg and add gradually to the dough – just enough to make it stiff.

    • step 6

      Wrap the dough in greaseproof paper and pop it in the fridge for 10 minutes.

      Lightly flour a clean work surface. Using a rolling pin, roll the dough into a rectangle about 1 cm thick. Cut into strips (or straws) about 14cm x 1.5cm.

      Spread a thin layer of Marmite onto each straw.

    • step 9

      Either twist the straws in the middle or leave them straight, and place them onto a baking tray. Make sure they’re not touching one another.

    • step 10

      Cook in the oven for 10-15 minutes, or until golden brown. Then cool on a wire rack.

    • step 11

      Warm the Marmite slightly to make spreading easier. Try using small cookie cutters to make shaped savoury biscuits: ideal for lunch boxes.
