Italian rice salad

- 300g Boiled ricerinsed and cooled
- 185g Canned tunadrained and flaked
- 2 Hot dogscooked, cooled and sliced
- 100g Sliced hamcut into small pieces
- 100g Cheddar cheesediced or grated
- A big handful of pitted olivessliced
- 2 Tomatoesdiced
- 30g Pickled beetrootwell rinsed and chopped
- 2 Hard-boiled eggspeeled and chopped
- 1tbsp Parsleychopped
- 3tbsp Olive oil
- Juice of 1 lemon
Method
step 1
In a bowl, add all the ingredients except the oil and the lemon. Stir well and season.

Chill the salad in the fridge and add the oil and lemon before serving cold.
