  • 1 tin of chopped tomatoes
  • 1 Onion
  • Tomato purée
  • Garlic
    or garlic puree
  • 2 Small courgettes
  • Green or red peppers
  • Mushrooms
  • Lasagne Sheets
  • Cheese
  • Bechamel sauce
    ready-made (or make your own)

    Method

    • step 1

      Add a small amount of olive oil to a saucepan and heat gently.

    • step 2

      Chop one large onion and cook until soft.

    • step 3

      Add the tomatoes, puree and garlic.

    • step 4

      Add the roughly chopped peppers and courgettes and heat through.

    • step 5

      Layer with the lasagne sheets in a large dish, add the bechemel sauce, and top with a little cheese.

    • step 6

      Bake for around 30 minutes at Gas Mark 7-8.

    • step 7

      Serve with potato wedges and salad.
