Quick rice pudding

Pudding rice has a soft consistency, and this is a quick and easy recipe. Serve with dried apricot purée, stewed apple and pear, fruit compote, low-sugar strawberry jam or homemade strawberry purée – just cook some strawberries and strain away some of the liquid. Then purée, sieve and stir in a little icing sugar to taste.

Cooking time: 35 minutes
Makes 5 portions
Suitable for freezing
You’ll need:
• 50g pudding rice
• 600ml milk
• 1-2 tbsp caster sugar
• ½ tsp vanilla essence
• fruit purées or jams, to flavour
Method:
1. Put the rice, milk and sugar in a heavy-based pan. Bring to the boil, reduce the heat, cover and simmer for 30 to 35 minutes, stirring occasionally. Then stir in your favourite flavouring.
