Annabel Karmel's mini meatballs
A funky finger food for toddlers - perfect for baby-led weaning
Ingredients

- 2tsp olive oil
- 1 onion, finely chopped
- 1 garlic clove, crushed
- 200g lean minced beef
- 45g fresh breadcrumbs
- 1tbsp chopped parsley
- 15g Parmesan cheese, grated
- 1tsp tomato puree
- 1/2 small eating apple, peeled and grated
- 1/2 unsalted vegetable stock cube, crumbled
- 1 egg, beaten
- vegetable oil, for frying
Method
1. Heat the olive oil in a pan and saute the onion and garlic gently for 2 minutes. Allow to cool.

2. Mix together the rest of the ingredients, with the sauteed onion and garlic and the beaten egg to bind. Form into 25 mini meatballs and fry in the vegetable oil until browned and cooked inside. Drain on kitchen paper.
