Annabel Karmel's Scrambled Eggs with Tomato and Onion

- 15g Butter
- 1 Onionfinely chopped
- 1 Clove of garlicfinely chopped
- 100g Cherry tomatoessliced
- 2 Eggslightly beaten
- A pinch of a chicken stock cube
- 1tsp Soy sauce
- A little salt and pepper
Method
step 1
Melt the butter and sauté the onion and garlic for 3 minutes, stirring frequently until softened.
step 2
Add the sliced tomatoes to the pan and cook them down until mushy.
step 3
Beat the eggs together with the crushed chicken stock cube, soy sauce and a little salt and pepper.
step 4
Add the beaten egg mixture to the tomato and onion and cook for a couple of minutes, or when just beginning to set.
step 5
Serve the eggs on their own or pile on top of some toasted ciabatta.
