  • 4tbsp Sunflower oil
  • 500g Lean minced beef
  • 1 Onion
    finely chopped
  • 1 Whole clove of garlic
    crushed
  • 1 Red pepper
    chopped
  • A pinch of chilli powder
  • ½tsp Ground cumin
  • ½tsp Paprika
    (optional)
  • 2tsp Tomato purée
  • 400g Tinned chopped tomatoes
  • 400g Can of kidney beans
    drained
  • 150ml Very low salt vegetable stock
    (made with half a reduced-salt stock cube and hot water)

    Method

    • step 1

      Heat the oil in a non-stick frying pan and sauté the mince, onion, garlic and red pepper for 6-8 minutes.

    • step 2

      Add the chilli powder, cumin and paprika (if using). Cook for 1 minute.

    • step 3

      Add all the remaining ingredients and simmer covered for 20 minutes, stirring occasionally.

    • step 4

      For a family-friendly meal, remove children's portions from the pot then add extra chilli powder or chilli flakes for the adults.
